- This Scottish recipe for Cottage Pie is from Delia Smiths Complete Cookery
- Course. Delia is a Goddess in the UK, and this book is my bible. Hope you
- like it.

- 1 lge carrot, chopped small 1 level tbsp flour
- 1/2 tsp mixed herbs 1/2 teasp cinnamon
- 1 tbsp chopped parsley 1/2 pt hot beef stock
- 1 tbsp tomato puree beef dripping
- seasoning
-
- Topping
- 2lb potatoes
- 2 medium leeks, chopped
- 2oz butter
- seasoning
-
- Preheat oven to 200C. Fry onions in dripping until soft, add carrot and
- meat, cooking for 10 minutes until meat and carrot are slightly brown.
- Season, and add cinnamon, herbs and parsley. Stir in flour, puree and stock
- and simmer. Boil potatoes and fry leeks in butter. Cream potatoes when
- cooked and stir in leek minture and season.
-
- Put meat into well greased baking dish, spread potatoes over the top, and
- bake for 25 minutes.
-
- For a traditional recipe, omit the herbs, cinnamon and leeks, but you won't
- enjoy it as much!!!!!!
